And just like that, it is SPRING!

Baby strawberry leaves in the sunshine. Also rabbit poop (great fertilizer, did you know?).

A week ago, we had a brief flirtation with what I like to call ‘Real Winter’: 8 solid inches of snow that hung around for 5 whole days.

Again, I love the South.

But today, it is all spring peepers and songbirds, projects in the yard, windows and doors open to the glorious sunshine. I’m a bit under the weather today, two long catering gigs and the return of the ice-slip back pain (although thankfully without the ice this time)…so this is just a little note to welcome the return of the sun. Two weeks, and it will be GLORIOUS here. I can’t wait for the strawberries to green up and set fruit in the pie garden, and the edible-looking buds to fuzz the outlines of all the trees. I’m ready.

What about you? What’s your favorite thing about springtime? And while I’m asking: what should I cook for the blog this week? I’ve got some (storebought) rhubarb…

    The coop had beautiful rhubarb last week. I cut it into 2 inch lengths and added grated ginger, half a vanilla bean scraped out, the zest and juice of an orange, and a bit of sugar. I didn’t want it to fall apart so I only baked it for 20 minutes. The syrup was almost better than the vegetable.

    When the leaves start to bud out on the trees. We may still (and frequently do)have snow on the ground so it SMELLS like spring in the early morning when I get off of work. Yup, best part.

        Yes, it’s still cold but we’ve had a few nice days lately. I’m hoping the cold and snow we had weekend before last will be the last of it and it will warm up and stay that way. But knowing Kansas weather, it’s wishful thinking.
